In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture. Dip the Vicenzovo ladyfingers in the fruit juice. Assemble the Tiramisù by making a layer of dipped Vicenzovo ladyfingers covered with mascarpone cream, peach jam, crushed Amaretto di Matilde, and chocolate chips. Make a second layer of ladyfingers and mascarpone cream. Top the Tiramisù with peach jam, Amarettino di Matilde, diced peaches, and chocolate chips. Chill in the fridge for at least two hours before serving.
