• 7 oz Amaretto di Matilde cookies
• Coconut flour
• Mascarpone Cheese
• A cup of Coffee

1. Make coffee and let it cool down. Dunk the Amaretti biscuits  in the coffee one at a time.
2. With the aid of a spoon fill one half with mascarpone cheese and lock everything inside with another Amaretto cookie.
3. Roll the amaretti in the shredded coconut. Refrigerate before serving.
