Cheesecake in a Jar with Figs and Amaretti d’Italia

500g cream cheese

185g sugar

90g mascarpone

150g whipping cream

10 figs

180g butter

200g Amaretti d’Italia macaroons.


Place the butter in a small bowl. Microwave on low until fully melted (make sure it doesn’t burn).

Crumble my Amaretti d’Italia. Pour the melted butter over them and stir with a spatula until the liquid has absorbed.

Place the cream cheese, sugar, cream and mascarpone in the bowl of a mixer and whip the cheesecake cream until smooth and airy. Let it chill in the fridge for at least half an hour.

Peel the figs and cut them into thin slices.

Start assembling: fill the bottom of the jars with the Amaretti d’Italia crumble, cover it in the cheesecake cream and the fig slices. Repeat until the jars are full.

Decorate your delicious single-serve cheesecakes with some whipped cream, a fig slice, a touch of Amaretti d’Italia crumble and fresh mint leaves.
