Wafer with Amaretti di Matilde Macaroons Base Filled with Milk Chocolate Cream

Here is the recipe to prepare a wafer with Amaretti Macaroons base and chocolate cream

Dear friends, the holiday season is approaching: are you thrilled too? I love

the Christmas atmosphere and I love inviting my friends at my place to share happiness: a relaxing afternoon with chats, delicious herb teas (by the way, which are your favourite ones?) and, why not, some home made treats. I’ll tell you a secret because I had not prepared anything so quick and tempting for a long time: delicious wafers prepared with my Amaretti Macaroonshoney and chopped almonds, filled with an irresistible cream of spreadable cheesemascarpone and bitter chocolate!

175g Amaretti  Macaroons

30g almond sprinkles

50g butter

2 tablespoons of honey

100g whipping cream

50g icing sugar

75g dark chocolate


First of all, coarsely crumble my Amaretti biscuits in a bowl.

Add melted butter, honey and almonds and mix to obtain an even dough. Allow to rest in the refrigerator for 15 minutes.

When the dough has cooled down, roll it out to a thickness of about 5mm. At this point, take a pastry cutter of about 8cm diameter, cut out disks and put them in the refrigerator to cool down for a couple of hours.

Whilst the wafers cool down, let’s prepare the chocolate cream to fill them.

Whip the cream with icing sugar in a bowl to an airy and smooth mixture.

Finely chop the chocolate and melt it baine marie (or in the microwave) until liquid and even.

When the melted chocolate has cooled down a bit, add the whipped cream.

Now that the chocolate cream is ready and the wafers have cooled down, you can assemble the dessert.

Put the chocolate cream in a pastry bag.  Take the wafers and garnish them with chocolate cream using a star tip for an elegant result!
